So my '73 f250 360 v8 is hesitating/cutting out when I try to accelerate fast. It's fine if you ease up to speed real slow. I put a new fuel pump in it thinking that was the problem and it's still occurring. Anyone know the next step I should take?
Prolly accelerator pump worn or out of adjustment on your carb. Make sure all you vacumm lines are good and hooked up correctly. I had the same prob your having on my highboy and went threw everything trying to fix it. Turns out the carb had an air leak around the butterfly valve and the whole carb had to be replaced. I spend a lot of money and time trying to get the old carb working. I ended up getting a reman carb at Autozone for I think around $180. Well worth it in the long run.

First check for vacuum leaks. You can do this with a can of carb cleaner with the red straw in the tip, spray shots directed towards carb base, butterfly rod, any other vacuum fitting. Also check the condition of the distributor vacuum advance line, and then check that the vacuum advance is working by applying suction through the line to it. Then check the ignition points to be sure they're not corroded. Then check point gap and confirm correct gap with a dwell meter. Then check timing with vacuum line to distributor off and plugged. Then use vacuum gauge to check your carb idle mixture settings and timing. Then check accelerator pump action by moving throttle butterfly while looking to see if both barrels receive a healthy squirt (engine off so it doesn't backfire in your face). If it's not one of these, you can make further tests.
gasket rebuild kits for these are really cheap, take it apart check out filter, accel pump, make sure ur timing is on the money, check ur fuel pressure as well , mine runs best with no more than 5.5 psi
Hmm not sure about the cutting out part but my 78 really didn't have any power while accelerating so I adjusted the throttle linkage and it was all good again.
so i have an update on how that turned out, not too good my fuel pump is shot, and for some reason there are two holes in the fuel pump, one on each side, i had to put a nut a bolt through the hole, when the engine was running it would shout gas out each side so i had to do some thing to make it home
