Hi all I'm brand new to the 6.0 and it seems to be world's apart from my old faithful 7.3.
Just picked up an 04 EX with 183k on it. Coolant looks brand new and is green which will be changed to ELC shortly
I have been reading for about 5 hours on the egr/oil cooler threads
I don't have emissions testing here so I am going to do a egr delete kit (not sure which one yet) but do I need to do the oil cooler or should I get a scan gauge and see what is going on temp wise? Can this be done with a smartphone app?
I have no records on the truck so I don't know what has been done
Plans for it are reliability, and better mileage. Exhaust upgrade, maybe a tuner. It will be my wife's daily driver and road trip/sports season transport for the kids.

Looks like you answered your own question, yes you need a SGII or one of the other monitoring devices. And yes get the green stuff out as soon as possible, After you flush add a coolant filter and blue spring mod. If you plan on towing EGT and Fuel pressure gauge at a minimum.

Thanks. I'm just nervous cause bad travels 10x faster than good concerning the 6.0.
Is there a preferred egr delete kit? I have read about stealth and stc
I don't know much about the egr delete kits, I am sort of new also. I do know buy reading this forum if you keep up the maintenance and use only motorcraft filters these can last.
Being a daily driver and an Excursion, look into a higher amp alternator so the FICM will see 13+ volts at all times.
The FICM is really going to be hurting if the engine is constantly started and shut-down, especially with Glow Plugs cycling, heated seats, heater and A/C. lights and more.
As for a smartphone app, Torque for Android works great with the ELM 327 Bluetooth adapter from eBay. I have an Edge Evolution in mine but a few things it can't read (Injection Pressure Regulator %, Injection Control Pressure psi) so every now and again I connect Torque.
I was thinking the app would be a less expensive option for now. Does it use data?

Yes, the app would definitely be the more cost effective option. And no, once you have downloaded the app you're good to go. No data required. It simply connects to your Bluetooth.
