Connecting a manual choke

I've got a Motocraft carb in a 351 and the choke cap, spring, choke rod are missing.

I was looking at manual chokes but it looked like they connect to the choke spring somehow and control the top plate using the choke rod. Since I don't have that stuff it seems like that won't work for me.

Can you use those kits to run the cable directly to the link or rod on the plate?

They usually come with their own cap to put in place of the old one and have a rod sticking out to attach the cable too..
