Is this a fully assembled engine, out of the truck? It sounds like it. Clean it before disassembly. First thing is scrape as much heavy stuff off as possible. I find a kerosene-based cleaner (Gunk) allowed to soak in, and then worked with stiff brushes, is a good first lick, then I use Purple Power or Spray Power anionic cleaner (like 409 only stronger).
Then disassemble and clean further.
Paint after assembly. That way you get everything, including any gaskets that hang out. Mask all openings. A paint company rep told me that engine enamels are formulated knowing that the engines are not going to be perfectly clean, but the cleaner you get it the better.
When I had the 215 in my 52 rebuilt, the rebuilder painted it after it was assembled. I had to remove paint on the engine areas where gaskets would be placed.
