So I will be replacing the manual hubs on my Ford 2002 Excursion 7.3 diesel 4x4 with the WARN 38826. Just a few questions. Will I need to use the small snap ring? Also, do I have to worry about blocking the vacuum lines going to each stock hub? Any videos or step by step instructions with pictures for my truck. I'm kinda of a newbie.

You can put them in cold too. You will need to block the vacuum and I would just look on YOUtube for that video.
Another tip on the large snap ring...make a small bend in the last eighth inch on one end. This will make future removal much easier. It gives you something to grab onto.

Will I still be using the switch on the inside to go from 2x4 to 4x4 for will it be all manual now?

Johnny, Dave has it correct, You will still use the inside switch on the dash to engage and disengage the 4X4 function in the transfer case but with the Warn hubs you will now just have to get out and lock them in. Or just leave the hubs locked in snowy weather and turn the switch inside when you need the 4X4. The truck won't mind driving around in 2X4 mode with the hubs locked, it will just make the front tires rotate the front axle inards, maybe cost you a little on the MPG but not much.
Still havent done the hub swap from stock to warn cause the truck was down for a bit. Just have a few more questions. I noticed the there are 3 orings. Correct me if I'm wrong. The rubber ring is for cap assembly, the lock ring is to lock the body assembly but am not sure what the smaller ring is for. Also, regarding capping the vacuum line I looked at the above picture but am unable to locate it. Can you direct me to it. I apologize for the newbie questions and thank you for your support.
