I keep looking at the infinity but I have no idea what it actually does. The order form confuses me, if the infinity is a little touch screen thing how can I use an 2 1/16" mount? What the heck is a Feps cable? CEI-HUB?!? it makes my head hurt. I'm clearly not ready for that technology yet.

I had a big problem with Auto Enginunity ( there wasn't a manual for dummies)..infinity is super easy for trouble shooting,reading codes, using as gauges,setting up alarms.. I may not be the smartest person but I think I should be able to figure out what a product actually does from the information on their website. They have some cool looking videos of it doing stuff, but what do I need to make it do that stuff?

Everything on the webpage is vague. From what I can guess you need everything and they just make you add it to make the price appear lower until you see the price after all you add everything you need on.
I swear every time I look at it, I picture the simpsons episode where bill gates "buys out" homers internet business. We can't figure out what if anything your company does, but rather than compete with you we're going to buy you out.
Infinity is an OBDII scan tool, PCM programmer, and gauge/recorder set. You don't need the hub unless you add sensor that are not otherwise unavailable on the OBDII port. OBDII has Transmission Temp, Exhaust back Pressure, Boost, Injector Control Pressure, etc.... Plenty of information to know what's going on with your motor. It does not read fuel pressure or Exhaust Gas Temperature - both are very important. You can buy the gauges for FP and/or EGT... or buy a hub and sensors to attach to the Infinity. By going the hub and sensor route, Infinity can monitor and record the readings... it can even have alarm levels set.
Infinity is a code reader. You know how you take a vehicle to the shop to have them "hook it up to the computer"? This is the computer... it's hooked up. It's ready to record "and incident" and do what a shop can almost never do - actually catch the truck misbehaving in the real world and record the event.
Infinity can program your PCM to a different tune (tunes available via email and a SD card), but this takes time - it is not change on the fly. Infinity can control your F5 chip (change on the fly) or F6 chip (change on the fly, plus the ability to upgrade/update tunes via email and a USB connection).
When you were looking for info on the Infinity, it's possible you stumbled onto the part where the enthusiasts would look. With that, it is assumed the reader has a foreknowledge of the systems. If a newb were to walk into this, the acronyms alone would send him/her to the medicine cabinet for an anti-depressant - or the coffee pot to caffeinate out of the mumbo-jumbo-induced coma.

No, you don't have to have it.the HUB allows you to add parameters the truck does not normally monitor, IE, pyro (or 2) fuel pressure,and any others you may want. It also allows you to control the chip (F5,F6,F8 or the Ts style chip.). I do not have it,just because I already have the gauges and chip controller mounted..
The cool thing about monitoring with Infinity is you can set up warnings,high and/or low. It can change colors and give a verbal warning.You can monitor appx 275 parameters (out of the box)analog or digital..
now to trouble shooting, my understanding is it will do everything that AE does except adjust the speedo. I may stand corrected about that..
it data logs and the best thing about that is when you hit the "start log" button (which is on every screen) It backs up 90 seconds and will catch any glitch you may have had.. reads/clears cods,KOEO,KOER, glow plug test,injector buzz test, all with a few pushes of a button..

with the Infinity alone you are correct.. With the CIE-HUB it is shift on the fly..

I've been considering a tuner and want gauges now that I'm towing more than 3500 lbs. Do the tuners modify what is already on my Ex, I really don't want to mess with what I have on the off chance I'm not happy with the results and want to go back.
So if I were to get the infinity and the CIE-HUB I wouldn't need to buy an F5/6 the infinity would do it all.

no, the tuners do not modify your pcm..unplug the chip and back to stock.
yep, the infinity will act as a programmer just not shift on the fly. In that case, to go back to stock, just load it from the infinity..
