If I had an opportunity to have gauges on both manifolds, I'd do that... knowing both temps is a great troubleshooting tool.

Out of curiosity, do you ever notice any variations between banks?

There should only be a 50-100* difference under normal conditions. This is at least what I have gathered from others who have dual bank EGTs.

If you are going to go through the trouble of having two EGT probes, I would try to get them on one gauge or 2 identical gauges. That's just me. What I would do is choose either your analog gauge or the EDGE gauge and put in a small ON-ON switch to select between banks.

Again, that's just me. There's really nothing wrong with doing it one on the edge and one on the round gauge.

I have 2 identical egt gauges in a 3 pod holder mounted at the bottom of the dash (for now) with my boost gauge in the center.

I just uploaded a picture to my library of those 3 gauges but I'm having a problem posting it from my phone....

The other option would be pre and post turbo. You can not hook them both up to the same probe. They are calibrated based off of resistance and it will throw it all off.
