I added a Swamps Tuner to my 03 F250 (7.3) , which I beleive is working really well , shifts well ,make's good power. I was running it in 2 different tunes ( mild street ) and (Light tow ) over the period of 5 Minute's (first ride out) and at some point the ENGINE light came on.. I never ended up anywhere near 1200 EGT's.. Shut off the engine and restarted and it was gone.
I have a DP tuner on my 03 Excursion (7.3) and have only seen the engine light once over the span of 2 years.
I do know the Swamps tuner uses a TS chip , and the DP tuner does not, could this make a difference ?
The Swamps tunes may not have the coding that Jody's does specifically where it relates to overboost and no check engine light. If the truck doesn't have a boost fooler on the MAP sensor, and the tuner let the boost get to 25psi or more, the PCM saw it as an overboost situation, and defueled the truck. It will store it as a soft code, and if you had kept driving without overboosting again, it would have gone away on it's own within a few minutes. Get an overboost annihilater, and you will be good to go.
At least this is the most common reason based on what you described. I would pull the codes to be sure though.
Did you by any chance floor it and stay in it? You may have had an overboost, with the SES light coming on for about 90 seconds and going out on its own.

Would I not have noticed if the truck defueled ?
I did notice the light , as I was slowing down !

Yes, I did floor it and stay in it for about 5 seconds
I will have to try it again !
Many tunes will still let the overboost light the light and leave a code but they will not defuel. If you were in the pedal big time you may be running out of hi pressure oil and setting a code. That happened to me with my stock sticks. My HPOP couldn't keep up on long hard accelerations.

This, I'll bet your HPOP can't keep up with the demand
If your HPOP cannot keep up with the oil demand of the factory split shots, then instead of buying a T500 HPOP, you can spend a bit more than twice the price and get a set of 160cc single shot reman injectors. Single shots use a bit less oil so your HPOP should handle the demand, and you get bigger injectors and more power. I went with Hybrids and my tired HPOP has no problem feeding them. Just my warped thinking, why just fix it, upgrade it in the process!
