I am replacing my (useless) ammeter with a volt meter. Not sure what I have to do to get rid of the ammeter. I'm assuming that once I take the ammeter out of the circuit that I just connect the two wires that passed through it correct?
If understand correctly, intend removing the 'amp' gauge and used the same wires to connect the voltmeter; if so, not sure that will work and may fry the volt meter, one measures lots of amps whereas the other measures 14-14.5 volts. Perhaps more knowledgeable member can better advise?

Correct. As the voltage passes through the ammeter which measures flow, it has two wires which measures current as t passes through the meter. If the meter is removed you must retain the integrity of that circuit.
The voltmeter is simply connected to any + ignition switched source and ground.
Rather than have a lone taped wire and someone not knowing what it's for and removes the tape there's going to be lots of amps running to the dash, or instrument cluster. I would remove the circuit; if nothing else, the wire from the fuse block to the gauge.
