What is the best way to take the motor out? I don't really want to take the cab off this time. Guess that is all pending what the AE software tells me in a few minutes.....
Remove the starter and check that first. Then get the procedure
for hydra-locked clearing. You don't have to pull the motor to do
any of that. This way you can make a judgement on what the problem
may be. You may still have to pull it,But it is better to know that you
have to than to remove it and find it was a fix in place problem.

Agreed. I'd at least pull the glow plugs or injectors, remove the belt, and try to crank it by hand before going to the trouble to remove the motor. If you do end up pulling it, for whatever reason, you'll be that much ahead (either way).
Definitely pull the valve covers and see if all the valves are still there and move, or if one dropped, pull the glow plugs or the injectors and see if it's hydro-locked. I don't know if you can pull the pan on this with the engine in the truck, but if you can get clearance I''d pull the pan next. I personally would bite the bullet and pull the cab if I was going to pull an engine. In my experience if you seize an engine at 60 mph, you get a hole in the block somewhere...
How do you know the AC pump didn't seize up or something? Why didn't you pull Glow Plugs to see if it hydro locked? Couldn't you drop the oil pan to see if something was broken?
Pulling an engine is a lot of work, if it just needs head gasket's, or something dumb like an AC pump seized.
