I am having a little trouble understanding my tow and haul limits. I have a 2012 F350 4x4 with the off road package. I need to know how much weight I can put in the bed and how heavy of a trailer I can tow using the hitch?
Diesel or Gas? What gears does it have? What's your cab config?
There should be a yellow sticker on your driver door pillar that'll tell you how much payload you can have (combined cab/bed). Mine's 3423lbs. My GVWR is 11,200 (this is on the sticker above the yellow one), so my dry weight is estimated at 7,777lbs. I've had it on a scale with me and another occupant and a half tank of gas, it came in just over 8,000lbs.
As for the trailer, do you want a legal limit, or what the truck REALLY can pull? The legal limit will be dependent on your answers above.
In addition to the year and model they will need your rear end ratio and which length truck you have and engine and what you plan to tow. Different numbers for a 5th wheel and a rear hitch.

Remember, these are Ford's recommended max trailer weights and your GVWR could alter those numbers. Sure the truck can pull more than that, but those are the published numbers.
