I guarantee the end of that fitting that goes into the head is not 5/16". It is 1/8" NPT that goes into the head itself.
The end that connects to the stock fuel lines might be 5/16" because of the o-ring seal that is there, or the Vibralock fitting as it is called.

Correct, but the fuel lines are 1/4" and the port in the head is 1/8" NPT.

Why not get a fitting that is 1/8" NPT x 6AN if you want to use 3/8"? 6AN is 3/8". Then use AN fittings which seal better than flaring tubing.

AN fittings are not that expensive. I'm running all Summit Racing branded AN fittings and they are at most $7 a fitting. Most of the fittings I used were around $3-$4 each.
You will need a 45* fitting on the driver side head.
