Well traveled to the mountains today and keept a eye on my delta's. Most time driving straight and flat I had a spread of about 20 to 25, My ECT was running all the trip around 188, once or twice 190. There was a time when my ECT was at 188 and my EOT was at 223. Soon and very soon I'll be doing a serious flush/backflush with Restore and possibly Restore +, When I'm done I'll also change the thermostat.
My main question would be what's the best thermostat everyone is using and the tempature of there thermostat. I have changed mine once since I bought the 2004 f350 from NAPA which was marked at 192 thermostat. I'm thinking I'll have to get a hotter thermostat.
Once I'm done with the coolent I will also be taking the turbo out and clean it up, I will also around the same point drain the transmission and change the external filter.
Your temps are VERY typical. I don't think there's a thing wrong with your thermostat. I made a 165 mile run to Little Rock Friday with a steady temp of 188/190@85mph.
Well I'm still going to change it after my extreme flush/backflush. Also at some point I'll be changing the EGR valve since I have the codes on my CTS. But right now my main items will be coolent flush and all, turbo cleaning and transmission drain and external filter change, then EGR valve.
What Mark is suggesting, and I'm going to ask...ever heard of a clogged oil cooler? With 35F degrees on the delta I would be more worried about a blown EGR cooler than your coolant only getting up to 188F...but that's just me. Assuming this is running light and not dragging a trailer. I'm an OEM guy...I've had better experiences with OEM parts; but if the one Napa is handing you works...go for it.
I had a after market thermostat on my truck. I really didn't like it. Top temp was 184 right out of the box. I did swap to a OEM t-stat and I now sit at 190 most of the time. It was a $30 lesson in quality for me.

I've never heard of a clogged EGR cooler, but I guess it's possible. The passages are smaller on the oil cooler, thus if it made it through the oil cooler not very likely to clog in the EGR cooler, but like I said anything is possible. A steady 188F EOT is nothing to worry about...I'd really think about that oil cooler and flushing your cooling system.
