If you like enjoying the scenery and sticking to the slow lane, go for an IDI. It'll get the job done, and still get double digit mpg. Also, if your trips are during warmer months, run WMO so that you save on fuel. I love my V10, but still miss my old 85 6.9, it was a great truck that never really needed any work.
I'd go with the 00-03 7.3 any day over anything else ford has offered in the last 20 years. Best diesel ever built bar none.

For years I have been driving 44 HP VW pickup. That thing was annoying on acceleration and top speeds, but than I did not have to worry where to keep the gas pedal >>> it had only 2 usable positions. Having no CC I cut a wood stick that would hold the gas pedal firmly on the floor for long drives.
But 30 years ago my pickup was averaging firm 35 mpg and the models still on the road are holding higher value than original MSRP.
I say choose the 6.8L triton V10 these engines speak for itself there is no way they can not do better then the IDI. I love the body style of those years but I have the V10 is a killer when it comes to performance.

Hard to say, we put on over 450K miles on our 1986 6.9 IDI and only replaced a high pressure pump on it.
Getting back to the OP's original question, I would ask what he means by "looking to downgrade". Why? Is the fuel mileage to onerous? Are you needing some cash, so wanting to trade down and have a little extra money? Is there something about the super dutys that you don't like so are looking to go back to the older trucks?
Frankly, at the intended useage you mentioned, the number of miles and size of trailer, sticking with the v10 seems logical. If there are other factors at play, then that will help us to make a recommendation to you.
