New truck, changing all fluids
Recently bought a 2002 F250 7.3 diesel, its my first diesel , and I love it already.
Not knowing when the last owner changed everything, going to go under and change everything. My buddy has an account at amsoil so was going to order all the stuff from there.
Going to do front/rear diff,transmission,transfer case and engine oil,
would it be wise to do coolant to?
Anything I missed that should be changed/checked?
Any advice would be appreciated, I like to take care of my vehicles but never owning one of these not sure where to start.

I would also use some DOT 4 syntetic fluid and do the brakes, and use synthetic ATF for the power steering, they commonly get neglected and forgot about, but it's best to do them both every two years.
Since you have an 02, I'd do a good flush and put a quality ELC coolant in and be done with silicate drop and coolant additive testing for a while. It has other benefits as well, but those are the big ones, and you'll know you're protected from cavitation. Welcome aboard.

I just run distilled water through until it comes out clear, then add 4 gallons of coolant on top, but a lot of guys run the Motorcraft flush or Fleetgard Restore (I think, not 100% on that one) chemical. I've done mine yearly so it always stays really clean, but if it's been a while it may be a good idea.

Read, read, read. I have a 2000 F250 7.3L (bought it 10/2010) and this is my first diesel as well. Not realizing just how powerful that engine is, I blew up my transmission while towing. A transmission temperature gauge would have warned me away from what I was doing.
I live in the mountains and it's easy to get carried away with the power, yet not realize how hot the manifolds and pistons are getting. A pyrometer will help there.
If you chip, chip with caution. Some products help prolong the life of the engine and drivetrain, while others make power, noise, smoke, and premature repair bills. A turbo-boost gauge (along with the pyro and TT) is good to have with a chip.
Use a fuel additive. Low-sulfur diesel is hard on things in there... so search for a good one.
Air filter! There is a "suction" gauge on the filter to let you know when the filter is loading up. Treat it like a "Low Fuel" light on the dash; when the air filter gauge starts to move - do something soon! Many of us have upgraded our air intakes.

Like people have said change your power steering fluid:

And your brake fluid in addition to the major fluids.

I have done it on three vehicles and it works flawlessly and very easy.
And change your fuel filter! Baldwin, Donaldson, Fleetguard and MC all make good fuel filters for the 7.3.
Also when it comes time to change the diffs and x-case a bottle pump makes it much easier. Usually NAPA or AAP or someone carries it for short money.
