If you had the choice, would you rather have a 6.0 and, well, you know...... or a 6.4 with it's poor fuel mileage? Same price, lower mileage on the 6.0.

Personally I would buy the 6.0. I'm a fan of them and they get great mileage. With proper maintenance and a little TLC (Tender loving care) it will go the distance.
If it was me I'd buy the 6.4L and remove the DPF, EGR, and kitty. It should be over 10,000lbs GVWR so nobody will be checking. I'd do that to your current truck as well if it was me....
The reason I say 6.4 with some parts missing over a 6.0 with some parts missing is the fact that the 6.4s are a common rail engine. No HEUI which means less problems. It uses compounds instead of a VGT which means longer turbo life, and fewer moving parts per turbo which means fewer things to break and easy rebuild of a turbo if it lets go.
So... my vote is for 6.4 with a few parts removed.
As far as the 6.7s I've heard of them breaking shafts in the turbo. The 6.7 has two compressor wheels on one shaft so you've got 2x the mass on that same shaft and when the turbo "Barks" you've got that much more mass that is putting stress on that single shaft. That's how it was explained to me by a friend of mine that works for a Ford dealership.
