Your only in Alabama....how cold can it possibly get...??
MN ....January -30F. I plug my truck in at work every night...and i have a timer on the plug in at home...to preheat for 4-6 hours. At work I carry an electric space heater, and plug that in as well....The cab is nice and toasty when I hop in...
We managed to get down to 8 F last winter.
I know that's nothing to you northerners but below freezing, light wind and high humidity hurts.

I just got my truck 2 weeks ago so maybe there is something I'm missing.
I don't have the RS so I have to walk my butt outside to start and turn everything on.
Others have discussed this and if I remember correctly, there's a few steps you have to remember to take the previous evening.
For remote start leave the climate control in auto. This will engage the climate control for heat or cool, supplemental heat if needed AND seat heating or cooling. The external temps have to be within the window for this to happen but it is all automatic. It doesn't turn on the defrost though.
The remote start will only put the climate control to what ever you left it as. It won't kick on the defrosters (mirrors/windows [if you have any coiled windows]) or heated seats. I wish there was a way around this.
Say, in the summer time, you want your AC to run. Leave that turned on when you shut the truck off and it will go back to that state when you remote start it.
Actually, it doesn't matter what setting you left it on. It's based on outside temp. Below is from page 85 of the users manual.
My understanding is that the climate control must be in the Auto setting when the truck is turned off. With this being the case all the options shown by doczenith1 hold true. We tried last winter not using auto and nothing happened. It is also very true that when you put the key in and turn it after the remote start it will default to the last setting when the truck was turned off.
I get in the truck, and start it, dont wait for anything in the summer. Usually though, i have used the remote start.
As for the temperatures with remote start, I thought I read somewhere the truck auto decides to use the heat or A/C based on ambient temperature outside, and doesnt not look at what mode you left it in. I have not tested this though.
I do the exact same thing. I read the same thing somewhere also, the truk decides to run air or heat. In the early Spring when it's 50 in the morning and 75 at lunch, 85 or 90 with the truck in the sun. If I leave the heat on, at lunch the AC will be running until I put the key in then the heat goes back to where I left it.
