Like joedaddy already said, the best performance gain is making sure it's performing the way it was designed. You might be surprised how much extra fuel you burn just from under inflated tires and a bad alignment. Not to mention a regular tune-up and fluid change.

A turbo would help too. lol Actually an HX35, HY35, or an HE341 off a 5.9 cummins would work pretty well on a 300. Maybe be able to get it close to 300hp with EFI? Might scatter some pieces though. I don't know how well they hold up to boost. I'd assume 8-10psi would be OK in one though after looking at the bottom end in my old 300...
