Another ECT/EOT question... :/

I know....there's a ton of posts on ECT and EOT, and I tried searching around to see if my issue was addressed but had no luck at all.

Anyways, I had to run down the highway today and running about 55-65 with a few redlights every once in a while and my temps ran about 192-198 ECT and about 200-205 EOT. But then I got back into town with stop and go traffic and my ECTs climbed to 216 at one point and my EOT got up to 221 at the same time. Outside temp on the truck was reading 107. Is that normal temps for that kinda heat in stop and go traffic or should I be looking into a t-stat?

I've just been reading a lot of posts about guys on here with tuned trucks and running unloaded like I am they're still having to really work to get ECT over 200 degrees. The main reason I'm more worried about it now is because as I was on my way home tonight and outside temps were only 81 degrees and my ECT and EOT were both about 202-203ish by the time I got home. That just seems like they're getting too high too easily.
