Do you have shift-on-the-fly 4wd? You may have something wrong with your vacuum hubs, one staying locked in perhaps, or both. If the hubs were unlocked, you wouldn't be having any issues with your u-joints unless they were binding in turns.

What a coincidence, I am running into the same issue with the steering in my truck.

I have to manually turn my hubs to unlock otherwise whenever I turn there is binding.

Is this the issue?

Well, I do have an issue with one of my hubs. When I removed the passenger side hub to change the u-joint, I found a few metal slivers and a couple needle bearings. The plastic pieces that extend out from where the hub mates has a few missing pieces. I crammed it full of grease (like an old wheelbearing) and had to put it back. I don't have the cash to swing a new set of hubs at the moment.
After thinking about this, I have a question, and probably a dumb one at that.
If I remove the hub from the unit-bearing, does that leave the axle in an unlocked position?
Also, will it screw anything up if I run it without a hub in place, if I get something to cover the hole where the hub sits?
Bear with my newb question. This is my first ESOF style 4X4.

You should take the hubs out and clean them up and re-grease them. See if that does it.
Also another thing to check is the vac lines coming off the back of the knuckle. The lines dry out and crack, and theres a plastic splice connector not far away from the knuckle that likes to break.

You may have it the nail on the head.

Oddly enough, whenever I put in 4HI, my AC deflects air into the windshield from the front vents. Only until after I get out of 4HI does it come out of the front vents as assigned.

Also, whenever I have the front hubs in AUTO, I do hear some odd noises coming from front.

It sounds like there are some vaccum issues and hub issues.
