I bought the truck a year ago, it had an Edge Evolution chip with digital display. I watched the temps (ECT/EOT) and everything was fine until winter came and then started to notice big differences.
Back in Feb. I did an EGR delete and oil cooler, after a restore flush and adding a coolant filter. Temps seemed good for a few days until i put some load on it and they went south again. EOT +25.
But recently the EOT guage has been jumping from around 215 to about 192 within a matter of seconds, then sometimes will jump back, other times it will not. The other day is was @ 195, i rolled they key on and off a few times and the truck would alternate from 214 to 193.
Could this be the gauge (uncalibrated), the sensor, the sensor tail or possibly that little piece of screen that was missing from under my oil cooler.
Check your oil and coolant levels. Also, what is your ECT doing? Are the ECT/EOT temps similar when the truck is cold? It sounds more like a sensor problem than anything, but if the sensor is out of the flow the reading could be compromised also. I'm sure there is a test that can be done but I don't know what it is.
After sitting the EOT is usually 2 to 6 degrees more than ECT.
ECT was low, like 165 to 170 before EGR delete & oil cooler. I did a thermostat @ that time and it stays right @ 190, never flickers. That's another thing, if the oil temp is truely @ 225 to 230, how could the ECT stay right @ 190?
Wouldn't a scangauge just read the OBDII same as the edge chip? I guess it could rule out the chip if it read differently.

Checking the temps with something other than what you're using just to verify that the reading are accurate. I've seen different readings from different instruments reading the same sensor.
If your EOT is at 190 constant and your oil is 225-230 (assuming the sensor isn't faulty) then you have a plugged oil cooler or some kind of obstruction in the oil cooler coolant flow. It is a quandry, to say the least.
Update, my guage is still all over the place. I guess i will have to buy a scangauge and see what that says.
I'm going to buy an aftermarket guage and am looking for an electronic sending unit for my oil filter cap that will not interfere with my filter. Any suggestions?
I wouldn't go for the filter cap gauge just yet. If your Edge is reading correctly, the PCM is also seeing the fluctuating(possibly errant) EOT info. EOT data to the PCM has a substantial affect on operation of the motor. Finding something else to see the EOT from the OBDII port is in your best interest to rule out a problem with the Edge, or a problem with the truck.
The truck has sat for last 2 weeks. I rolled the key on today and found a 10 degree delta. I unplugged the EOT gauge which threw a code but when i did that the EOT immediately read the same as the ECT on the edge display. Truck would start without the gauge plugged in but didn't like it. The truck continued to display EOT temps with the gauge unplugged and even showed increase when the truck warmed up???
I'm still planning on adding the electronic temp sending unit for another EOT gauge. I'm still looking for the correct sending unit for the filter cap.
