I'll say, it depends on what you really plan on doing with it. If it's for a DD, occasional load hauling and go anywhere, do anything truck, stay with the 6. If you just want something that gets there fast and does whatever you want, go with the 8. The fuel economy won't be as good, parts for the 8 will probably be easier to get than for the 6. I have a 4.9(300) in my 92 Bronco behind a M5OD, probably the same setup you have and couldn't be happier. I really don't have a need for a V8 in it for DD and off roading. The only reason I wouldn't haul with it is the short wheel base and gearing. I have along wheel base truck for that if I need to. The 6 will get you there and anything you want to take with you. It just may not do it as fast and as loud or cool sounding as a 351 would.
In your case, since you have both motors and the ability to switch it out, I'd say just go with your gut and decide what you want to do. Perhaps call the state, tell them your situation and see if they can give you a reasonable work around to your delima in regard to plates and VIN.

There's just no subsitution for cubbies , but you could inject it and give it a turbo and have the best of both worlds . A 300 I-6 with a spittin hair dryer makes alot of ponies and makes good milage . I'm just sayin,,,,, olllllo
