Do the dome lights in a regular cab truck sit flat on the ceiling, or do they sit at an angle? If that's the case, the angles could be off. I don't see it being an issue on a crew cab or extended cab.

Cars, Broncos, Supercabs, and Crewcabs will all have the same angle dome light. Single cabs are by themselves.
You have to look very carefully at the lights, it's easy to mistake the differences and use the wrong one. The map lights on the ones from cars/broncos/etc will just point at the visors in a single cab, rendering them quite useless. The single cab light may work in a supercab/bronco/crewcab/car, but I imagine the map lights will just point at the back of the seats.
internals from one of the car domes can't be bent around to accommodate a single cab? or can the internals of a chromed single cab be transferred over to one of the newer plastic housings? like the 2nd post in this thread?

No, the housings are completely different.
The light on the left is from a single cab. The one on the right is from a Car/Bronco/Supercab/Crewcab.
