Can you get a carpet delete option on an XLT? Also do they still have Manual mirrors w/out heat and turn signals? Is manual transfer case still an option in '11?

The headlights are the same for 2011. No more sealed beams. You can get cloth seats in an XL as well. The mirrors on the XL are manual without heat or signals. A manual transfer case can still be had, but you will more than likely have to special order a truck to get it.
You can get carpet delete in an XLT, but only through a fleet order.
The headlights are the same. The new vinyl seats in the 40/20/40 config are so much nicer than years past. I like the black grill and am going to paint it to match the paint so i went with an XL. I wanted the carpet delete but also wanted chrome bumpers,alloy wheels manual tow mirrors and power equipment option. I got all that in XL for 2k less than XLT
Concur, I wanted carpet delete on mine, but my dealer said they still haven't convinced Ford of the value in doing so. Too bad. Back when I ordered my 99' F150 with carpete delete I was really glad I did so. Rumor has it we get a bit of rain here in Kodiak.
So, my XLT will just have to do with big deep floor mats instead.
