Been hearing of these horror stories of the EGR cooler failing and causing the #8 cylinder to seize. Wondering if I should buy these, for a little better piece of mind.

I believe you'll also need a tuner/tune that disables the EGR function. The block-off plates will increase the exhaust back preassure, so you might have head gasket problems. It's a gamble either way, but I think the EGR cooler failures you're talking about are few & far between.
If it were me and I was THAT concerned about the possible EGR cooler failure, I'd delete the entire EGR system. Like I said though, you'll need a tuner to make it work w/ no codes thrown.
For what it's worth, I'm considering deleting my EGR system too. Just have to wait til income tax check time......

Thanks for the input... The tuner I am using DOES delete the EGR. I am still debating though, whether to do it or not...
With the higher power tunes, some programmers use the EGR system as a wastegate to prevent the high backpressure. What tuner do you use and what power level? You might want to talk with your programmer and see what they do with the EGR, if its off all the time in the programming, then you can go ahead and block it off I think.
