NC Food and Recipes
One thing I have been meaning to get to here is our own recipes. North Carolina has some great food, and we have some excellent cooks in our group. I wanted to create a thread to share these recipes so that other's can remember our cooking.
Starting off is my own North Carolina Vinegar Based BBQ recipe:
4 Cups Apple Cider Vinegar
1 Cup Brown Sugar
4 Tablespoons Salt
4 Tablespoons crushed red pepper
2 teaspoons Cayenne Pepper
Mix. Shake it up. But it in a bottle (I like liquor bottles with the pour spout)

Mom's recipe
ROCKY ROAD FUDGE
· 1 pkg mini marshmallows
· 16 oz. jar of salted peanuts
· 24 ounces of chocolate chips or chocolate almond bark
· 1 can sweetened condensed milk (like Eaglebrand)
· 2 Tbsp. butter or margarine
Line a 9 € x 13 € pan with aluminum foil and spray with non-stick spray.
Mix marshmallows and peanuts in large bowl.
Microwave chocolate, sweetened condensed milk, and butter in microwave-safe bowl until melted and smooth, stirring after 30 second increments.
Pour chocolate mixture over marshmallow/peanut mix and stir well.
Pour into prepared 9x13 pan and press into pan.
Refrigerate several hours or overnight until firm. Lift out and cut into squares.

All Meat Racetrack Chili
3 lbs. ground chuck browned and drained
2 lbs. smoked sausage cut in small cubes and browned
2 med. yellow onions chopped and browned
2 bell peppers chopped and browned
1 qt. tomato juice
7 oz frozen orange juice concentrate
10 oz Coke(not diet)
12 oz can tomato paste
2 tbs yellow mustard
1/4 c. A.1. Steak Sauce
1/8 c. soy sauce
3 tbs.chili powder or to taste
1 tbs cumin or to taste
hot peppers to taste
small amount of chocolate. (2 or 3 Hershey Kisses)
Brown chuck and drain (retain drippings)
Brown veggies with some of the meat drippings and drain
Brown sausage and drain
Add all other ingredients to stock pot. Heat to a simmer and add meat and veggies.
Bring back up to simmer. Cover with lid (use splatter screen for a little thicker chili) and simmer about 1 hr.
Seems to freeze well.

My wife is going to submit a recipe soon.
Here's my submission:
Toast bread for several minutes or until golden brown.
Apply lots of warm butter to one side of bread.
Sprinkle bigly amounts of cinnamon sugar to buttered side of bread.
Consume.
