5.8 to 5.0 engine and tranny swap

OK, I have a 95 F-150 extended cab with a 5.8 and E40D tranny gas mileage runs about 14 to 15 in town and 17 on the road. With a good rust free body and decent interior. The biggest trailer I pull is a small jon boat trailer. Problem is this engine is getting on 235,000 miles and not treated so good by the previous owner. The tranny has been rebuilt once with good results. The only thing wrong now is the speedo is out due to the PSOM I think all indications anyway.
I would gladly give up the 5.8 and the auto tranny for a good 4 or 5 sp. manual bolted to a 5.0 engine. I figure a bit better gas mileage and a rebuilt engine would keep this rig on the road for at least another 200,000 miles.

Question is how big a pain in the butt would this be computer wise and the installation of a clutch pedal mount and such. It also has a 2 piece drive shaft and 3 universals in the drive train.
