I just got my SCT X3 from Matt last week and I've loaded my truck with the Econ Street Tune and it's working great! I'm going on a trip next weekend and I want to run the Highway Econ Tune. How far in advance should I do the swap? I'm new to all this and appreciate the help.

you could do the swap the day before, or even the morning of the trip if you want. once you reflash, do a series of launches from a stop up through the gears.
one at 1/4 throttle, one at 1/2 throttle, one at 3/4 throttle, and one at full throttle. this will give you a headstart on the learn. then just drive it, the learning should be done within 200 miles worse case... my spartan tunes are usually learned within the first 50 miles.
