I recently replaced my thermostat with one from Ford and my coolant temp gets up to 208 and oil temp gets up to 211. Are these temps normal for being unloaded?
What is your ambient temp outside? Are you driving on flat roads? Is your oil system stock? Seems high if your just cruising on flat roads and it's not blazing outside.
I run 190 - 192 also with a Ford t-stat. I plan on trying the Mishimoto 200 stat one of these days. Probably when I install a coolant filter as I have to drain the coolant a bit anyway.

Those temps seem pretty high for a stock stat with no load and average ambient temps. Should be in the low to mid 190's for ECT
When was the last time the radiator, intercooler have been cleaned, dirt and dust and dead bugs are going to reduce cooling capacity significantly, sounds like you are running slightly high but only marginal. If you are cleaning it, it has to be back flushed with low pressure water so the fins are not bent, and you need to be careful not to pry or poke any holes in the rad. It might be worthwhile to test a different thermostat. After that, I would be thinking water pump. What are your oil and water temps after an overnight cold soak,do they match?
