That warning light is a combination Oil Pressure/Coolant Temp gauge. I presume the indicator light will come on when the water temp is very high or the oil pressure is very low. Do you have abnormal reading on either of these gauges?
Here is a pdf of page 8 and 13 from my owner's manual.
I see a max of maybe 195 in the hottest North Texas summers on my Scan Gauge. I'd be a little nervous seeing my oil temps that high. Are you guys with that high of a temp running the 203 deg stat??
BTW, I never new there was a separate light for oil pressure or coolant. I thought that's what the "gauges" were for.
EDIT: My 2002 doesn't have that. It has a "Check Gage" light that apparently replaced the one y'all have. However, I've never seen it, even when the fuel is low. I get the little fuel pump light when that happens.
From my Manual:
Check Gage: Illuminates when any
of the following conditions has
occurred:
• The engine coolant temperature
is high.
• The engine oil pressure is low.
• The fuel gauge is at, or near empty.

I am just running with the stock type Motorcraft thermostat (not sure what the temp setting is though...). I connected my AE on the way to work this morning (22 mile drive) and the oil temp averaged about 185 degrees with air intake temps around 60 degrees. I was surprised how quickly the oil temp would rise if I stomped on it for a bit. (Seems odd that the temps would climb that quickly with the volume of oil in these things.) When I got to work, I put it in park and held it at 2000 rpms for about 20 seconds and the oil temp quickly climbed to 192 before I let it idle back down to normal. At idle, the temps held steady right at 188 for a minute or two before I shut the engine down.
I've never monitored the oil temps when towing but I'll be sure to give that a try next time.
OE motorcraft is going to be a 195*, the 203* are special order, not even avalible from the dealer IIRC. I also am interested in the temp of oil brake down. but i will start a new thread for that!
