I recently bought a '16 F350 Platinum 4dr long bed SRW and I want to change the wheels. The original owner installed a set of 18X10 American Racing wheels with with a set of Toyo Open Country R/T 35X12.50 tires on the truck. The original owner also installed a set of Ford mud flaps and ever time I fully turn the wheel, left or right the tires hit the mud flaps. I do know the offset of the wheels are positive, but I don't know how much. I want to replace the wheels and tires because I am tired of the rubbing, but I do not know what size wheel and tire combo I should get that won't rub. Is the ride quality better with an 18" wheel vs a 20" wheel since the 18" wheel will have more sidewall? The factory Platinum wheels are 20X8 with a plus 40 or 44 offset and the tires were 275/65R20.

Go here... there's tons of info as guys post up their details about their trucks, wheel offset and tire size info, lift info, etc... you can search your year truck... great site.
Maybe just remove the mud flaps? I run 37x12.5 on 18” rims no problem.
What offset do you have and is your truck lifted? I thought about taking the mud flaps off, but I am concerned about rock chips on the lower section in front of the driver/pass doors and on the doors themselves. I had an '11 F350 SD and those lower sections had so many chips even with the factory wheels/tires.
My setup is 18x9 Vision Ojos wheels with +12 offset wrapped with 35x12.50 tires and I have zero rubbing anywhere. I do have a 1.5" level up front but I don't think that would have mattered as far as the tires go.

Maybe I should take more care too…
I don’t know what the offset is, the rims are in the registration document: Ford 9Jx18 ET10 And its a big enough offset that I have wing extenders - not allowed to have wheels beyond the body over here.
Truck has a 3 inch lift, probably the minimum with those tires.
I bought the truck as it currently is, so only have the information in the registration document - and in Germany everything needs to go in including changing the headlights, US-style number plate, lamps on the mirrors and nerf bars, tow hook etc 🤮
I had this info on my phone; yes the stock 20s are 20x8 and the offset is +40mm. That 18x10 with a slightly taller 35" tire, compared to the 275/65R20s which are 34" but also wider at 12.5" wide and with a different offset, not surprised you are rubbing when turning.. from this site here:
As to your American Racing wheels, I found these for your truck on their website... but only in the 18x8 flavor. Not saying these are the wheels but these specific ones come in two different styles, machined with clear coat and satin black, with 0mm and 18mm. That means those wheels further out from the hub than a more positive offset OEM wheel would be...
As to the difference between 18s and 20s, I have a set of Ford 18 inch steel wheels for winter with snow tires and I can't tell the difference between the two but I'd imagine when it comes to pulling a load, there's probably more support with the 18 inch tires due to the taller sidewall but IMO my truck rides like a one ton truck whether on 18s or 20s.
