Starts & runs fine until it gets to a certain temp. Doesn't matter if my foot is on the go pedal or the brake. I'll coast to a stop and try to restart-no good.
If I let it sit until the temp gauge is below the lower line it will restart and go until it gets to normal operating temp and do it again.

Are you getting a CEL? What oil are you running and how long since the last change? Just trying to ask a couple of questions I have seen asked on this type of issue before.
nope, no low oil sensor here, but in a 7.3 at least, if you have no oil pressure, it will not run the injectors for very long. oil pressure good?, Verify with a real guage, cold and hot, the dash one is a dummy. always reads good. or not at all. maybe your ready for a new LPOP.
Dipstick says 1 qt low......
Would a sensor for low oil cause the engine shutdown after it warms up and allow a restart after it cools off?

I could be wrong, but I don't think the dip stick has a range of one quart... I think it's more of a "This is OK" and "This means no-go" thing. If you are to the bottom of the line, you likely introduced air into the High Pressure Oil system. The truck will behave weird until you have topped the oil off and ran the air bubbles out (about 50 miles). It's a very cheap and easy thing to try before pulling the fire alarm.
Thanks to all-I found oil on the wrong end of the ICP
So I will get the oil changed tomorrow to get that crosshatch dipstick section covered again and if it dies before I get it home I will unplug the ICP to see if it will get me home. Then I'll start looking for a new ICP.

Bottom of the crosshatch is 2 quarts low. The truck will still run just fine being 2 quarts low on oil. What brand and weight of oil are you using? Are you using any oil additives? Does the oil smell and feel like oil, or diesel fuel?
Starting on cold, thick oil and not running on warm oil is often a sign of a bad IPR o-ring. You could pull the IPR to find out for sure, but you should probably have new O-rings on hand before you do in case you find an o-ring so bad it won't go back on.
