it depends on how it is cut, I cut mine bone in so with a big cow you get about 300 pounds. with a butcher shop doing it about 250 bone in. the last one I had done at a butcher shop hung at about 400, when I picked up the meat there were 2 boxes of meat that were 2' X 2' X 1'. they kept a lot of it!
What hunt do you have?
mine starts a week from Friday.
My old business partner and I booked a hunt in New Mexico with an outfitter from Sierra Vista. It's a combination bison/elk hunt somewhere north of Albuquerque (my partner made all the arrangements.) We're still debating on whether to do the butchering ourselves or pay someone to do it. There is an old fashioned butcher shop in Tucson that does a lot of game meat, but processing an elk and a buffalo will cost a fortune. I'd rather do it myself, but I'm not sure how to store the meat while waiting to cut it up. Mid December can still be pretty warm here.
