I think you are beginning to over-analyze this whole thing, Chief. Look at what you wrote:

To be honest, it looked like an old mans truck that was restored for him and his 80 year old wife to cruise around town in, doing 20 km/h everywhere.
I like the old style truck (my 78 dentside), but I'm not fond of that secondary coloured roof now.
I'm also thinking today that maybe Silver/Jade/Silver isn't the way to go. I'm not sure why..
Anyone want to talk me into doing it? Or maybe give me a different colour combination?
I would however like to have Jade as the secondary colour because my interior is jade.
I personally think Silver/Jade/Silver is the most obvious choice to make, but its not my truck, its yours. I agree with you about the roof color being different and looking like an "old man's" truck. So let's break this down to what you have so far:
-You want to keep the racetrack trim
-You want the truck to be two-tone
-Jade is a fine color, and already your interior color. So it WILL match!
-You already ruled out the roof color being different than the primary color.
Let's make this simple: besides silver, gray, gold, or khaki, what other color will compliment Jade? None that I can think of. It looks like the ONLY thing left to decide is what color do YOU think will look good against Jade?
So I have a question. Alot of the pictures being posted have the simple color 1 top, color 2 mid, color 1 bot. Was that for the later year dents? Why do some have the roof one color, then the hood and upper portion of the body another color, then the rest the same as the roof? Maybe this was covered already and I didn't have the patience to read through all the posts.

It's only for dents have have racetrack trim. If a dent doesn't have the proper trim with 1/2/1, it would look ridiculous. I'm not sure on the year that dents were offered to have racetrack trim, but I know for sure that 78-79 had the option available.

I believe this is for the earlier years of dents because if you look back at the massive amount of pictures that were shown by another user, he/she displays the options for colours and trim as an old style looking ad in one of the pictures.
If you do end up looking for the old ad, it's a tall and thin dark brown picture showing all the different options for the truck of that year.
It's actually nice to see that the information for something like that is still available.
Yea, I looked at my dennis carpenter catalog and it only lists the racetrack trim for years 77-79. And I've noticed the pictures that get posted of the 1-2-1 combo all have the square headlights and the others have the round style. I'll have to search for that ad you're talking about.

Interesting. Thanks for that bit of info. I thought for sure that it would have been offered to previous years as well. Now I feel extra special that I'm using my racetrack trim .

Don't be fooled by this. My truck is a 1978 tutone truck with racetrack trim and round headlights that are stock! The 78-79 trucks had what some people call a "half year" where you had a choice of headlight style. It confuses a lot of people in determining what year of truck and the options of it, but I know for sure that you could get either style of headlight for the year of 78.
Also, don't be fooled by people telling you: "Oh he just change out the bezel and the headlight fixture".
This is not true, my truck came stock with the headlights this way and I've contacted many many truck owners for parts whom have had their truck since zero km's that have said the same thing.
I have always been in favor of the Dark Burgundy for a solid color, or cream/ tan and Midnight Blue for two toned. I would keep at least the basic trim too. I've always thought it added a little class to the old trucks, not like the new ones where they're mainly made out of plastic and stickers. Ugh!
I bought a 78 4x4 new and am now restifying my 73 into a semi-clone of my 78. Mine was Cream with no trim. Here is what I am thinking for my eventual color scheme. I don't know who this truck belongs to, but I found a picture of it on this board a long time ago.
go with the jade green and white somebody posted a couple of pics of that combo and it looked super sharp..id definately keep jade in the scheme as thats yer interior color
My vote is two tone aand keep the trim. I'd give my left lug nut to have my supercab in full trim and two tone......IMHO
Supercab trim is soooo hard to find and deadly expensive when you do.....which is why mine is going solid. I'd prefer to tone if I could afford the trim.
If you are between the ages of 12 and 30 years old, it is a requirement that you remove anything that resembles chrome, paint the whole truck flat black including the mirrors, replace all of the lighting with LEDs, and if your original engine runs perfectly fine, plan on ripping that out ("swaps') to replace it with a less dependable plastic/aluminum/electronically controlled nightmare "swaps" engine, and plan on painting that flat black too, don't forget to include a "build thread" on how to spray paint everything one color. Including the rims. "22 inch minimum, your welfare wheels must also be flat black.
If you are a crazy, cranky, cantankerous old man who loves the way these things looked new, nothing says class, style and appearance than a good two tone paint job. These were the best looking trucks of the era, and the two tone schemes sold a lot of Chevy and dodge guys on thier first fords back then. And you can't get a good two tone with nice trim anymore, it really stands out.
Even a solid color with a piece of solid trim down the side looks excellent.
But please, please please.....avoid the faddish, flat black "urban ricer" look, there are dozens just like it out there, and IMO, removes every bit of character, style and identity that made these trucks beautiful.
