It really depends on your intended use for the truck.
You want to tow a big trailer with it? Then IMO it's best to leave it stock or at the most a slightly larger exhaust housing. You want to build boost early and keep it there so that a lot of air goes through the engine and keeps the EGT down.
Want to put huge injectors in and run it at 3000+ rpm? Then you need a larger turbo.
