I've been changing the oil in my truck every 5000 miles. Since I bought my car, that has roughly corresponded to a year oil change interval on the truck. I think last year I only managed to get 4000 miles over the course of the year. As long as you drive long enough each time to get the oil to operating temperature to evaporate any moisture, I think it should be fine changing it once a year, or at the six month mark if that's what you are comfortable with.
Once a year or 15,000 miles with Redline Oil. '92 F-350/5.8L w/150k, '04 Intrepid/3.5L w/125k, '94 Mustang GT/4.6L w/142k. Oil consumption has not changed on any of them over the years I have owned them.
