Carb swap
I have a 82 F150, 351w, Variable Ventrui carb that I am sick of. I'm looking to replace this carb with a regular venturi carb, with electric choke, and would like some inputs and ideas that would afford me some insight on what is best. I'm looking to optimize fuel performance on the highway. I'm not looking to whiplash myself off the line, but I guess you could say that a little pep is always good.
The wife says she is gonna foot the bill (cause its my birthday) for the carb, but I'd still like to make an educated, cost effective decision. I've not isolated myself to any particular make/ model is just want something that work well in all situations...
Any suggestions will be greatly appreciated.....

Thats about the price range I mentiioned to her.....do you have model numbers and or a description for both the carb and intake? Also, where to find them would be another good piece of info.....

I do have personal experience with this carb, and it has always performed well on my Fords. It has manual choke, so you will need to mount a cable under the dash. I like this feature, but if you don't, for a little bit more money you can buy one with electric choke(look a little lower down on the carb screen). I have also heard good things about the edelbrock carbs, but I have never run one. But I bet it would do fine.
Back up to "air and fuel delivery" and then click on "intake manifolds and acc"
click on "edelbrock performance intakes"
click on performer series.
I have no experience with this particular manifold. I have run edelbrock manifolds on other engines, and they work fine. I just picked this one so the above carb would fit. If you wanted to hunt around for a used manifold, a truck or bronco with a 351HO would have a factory manifold that would let the carbs above bolt on.
Just remember there will be some stuff (hoses etc) that will have no place to go if you use the above set-up. All you really need is one hose to the distributor, one hose to the PCV valve, and one hose to the original aircleaner set-up, which I would use. I like keeping the original aircleaner for the hot air feature on the snorkel, and it makes the engine look more original for inspection purposes.

If you need a four barrel manifold the performer is the perfect best choice like these guys are saying. But the carb choice- I love Holley carbs, but if you don't then get an Edelbrock. You'll be happier( trust me).
