1956 Dash Insert
Anyone know of a shop that sell this insert in a polished version OR could make an insert that will hold two - 5" gauges?

Notice this one is straight across the bottom. I dont want to cut into the dash if I can avoid it.

The picture you listed is the insert that I have. I have seen multiple versions, both polished and unpolished but none with just two 5" gauges. The insert fits over the flange of the dash and there shuld be room for just two 5" if the gauges were centered properly.
I left mine in unpolished aluminum since the color matched my trim. Below is a picture:
