Headers and exhaust are manditory to get full potential, but you don't need anything else.
What would the difference in HP/TQ be, if I went with a Comp 35-324-8 cam, bigger Throttle body and MAF Vs the Comp 35-320-8 with stock throttle body and MAF? Or do the GT40 Heads not flow well enough for the 35-324-8?

A higher stall converter wont lunge the truck, it operates the same a stock unit, just at a higher RPM. It does put the motor closer to peak torque which is ideal for off-road use and accelerating from slower speeds. As speed increases, and/or load decreases, the converter will lock anytime in 2,3 or OD. Having a triple disk lock-up is far better for towing and hauling than the stock single disk lockup; a single disk will still slip under heavy load.
A converter upgrade isn't cheap, and there is a bit of work involved, but it makes for a fun driving experience and can prevent damage to the transmission due to converter failure.
lunge was a bad word to use. being at peak torque in offroad can work against you. to much and you will just spin your tires. rarly do you run in those other gears also. generally in low range and 1st gear.
i do agree upgrading the converter is a good idea if you can afford it. stall speed is debaitable :-)
