the wires are a little hard to work on because they are tied up there pretty far but no biggie and be careful with the big + lead feeding ito the fuse box ,, a few folks have had some sparks fly if the insulation is compromised .. I usually set an insulator over the sheet metal ,, you will see where

I bought the truck used, so maybe it was already done however it is not wired to a switch, but when it idles for more than a minute or two it automatically raises the idle to 1000 rpm's. Is this some sort of hi idle, or does it need to be at 1200?

Perfectly normal. All 6.0's have that built into the logic of the PCM. It will vary the rpm's based on temp and altitude.
It's not exactly the same as the high idle mod, in that you don't have any control over it. About 1,100 rpm is as high as it will go. If the engine is already warm, it won't do it at all.
