I checked lmc's catalog as someone said they got their bolts there. I did not find them. So I am still looking for the carriage bolts. And as for whether or not I have a 5 star cab, I don't know how to tell the difference. It did not have an interior light, but it did have a fresh air vent on the right side of the truck that went through the fender. Any information on 5 star stuff would be great.

I checked and my spare radiator saddle doesn't have the bolts. I looked it up in the Parts CD, it differs from 52 Merc's description there; says it's over 4" long which seems right to me (see below). Anytime a part has a number like that, you can be sure it isn't available, because the "-S7" suffix means it's a hardware store part, something the dealer wouldn't order but just buy locally.
You can Search for "5 Star" and get all the info on what was included. It doesn't appear like you have one, you have standard hood spears.

wow thats dedication when you dont want slitely different bolts that you cant see. How long do you want to spend on your build because if your not going for a total show piece that could be a major setback.
