Did a search, and found remarks in passing that tuners adjust shift points. Can somebody tell me more about what differences I can expect in the shifting with a towing tune? Not sure which tuner I'll go with, but most likely DP.

Yes, there is a range of transmission controls that a good tuner can adjust. You can adjust the shift firmness, shift points, downshifting strategy, and more.
Jody at DP-Tuner has updated some of his tuning lately after working with John Woods Transmissions on various programming and strategies. If you are planning to go with DP, call up Jody and talk to him about it.
I've been running DP since 2005, and it's been great.
I have very recent (just a few months old) DP Tunes in my 99 and the trans shifting is very nice. Jody can even program the trans to downshift as you are slowing down... pretty neat feature IMO.

I love that downshifting feature that Jody thows in there.... as soon as the needle hits 70 kph, downshift!
What's good for the 5.4L F250-gas? I've been looking into tuners and don't even know where to begin
I would cruise on over to the 5.4L forum [Performance, Engines and Troubleshooting - Modular V8 (4.6L, 5.4L)] and search/post over there as I'm sure there is some good info there for your powerplant.
I have found the Super Duty And Heavy Duty forum to be great for general stuff common to all trucks and some specific questions to get a broad response. For specific powerplant issues/questions/modifications I have found that the engine specific forums are where the heavy toads hang out.
