deer burger recipes?

deer burger recipes?

well,I ate the last of my venison steaks tonight Now i have about 10 pounds of deer burger to eat. What are some good/cheap/easy recipes to make out of the burger?

I dont know any recipes but some deer sounds O SO GOOD right now. I wont be able to sleep tonight now!

I usually mix mine with equal parts ground beef 1lb-1lb...whether its venison or wild pig "hamburger". The commercial processors around here mix the extra fat in using pork fat.

I also use Pappys seasoning or your favorite to make gourmet burgers.

We also use the ground up stuff for summer sausage and "pepper" sticks which the kids end up eating all of!

In fact my son wants me to grind up all the remain steaks from his deer and make them into pepper sticks.

umm i generally mix some corn meal... (just enough to soak up some of the watery bloody stuff and get it all to stick) then season it up nice and good... then press them out into burgars... and toss them in a baking dish or broil pan and bake them at 350 until i feel is good ammount of time, and flip it over to cook the remaing side.. it sort of taste a little like corn bread... but a good way to get them to stick when you dont have any thing with more fat content in it...

but with my deer we butcher our selfs.... it all goes in the freezer as steaks and roasts..

only burgar we have one of our neabhors gave us, they got a deer that was hit by a semi... sheriffs didnt want to deal with it... they picked it up... and shiped it to the butcher... to much to fit their already full freezer... and gave us some..

If it hasn't been added already (by the butcher/proessor), add some pork fat or beef fat to the ground venison. (Adding some ground beef works, too, but, that costs $$$.)

Blend well.

For each pound of ground venison, add ONE EGG.
Add one medium onion, chopped (for each lb of venison)
Add salt ('sea salt' is fantastic!) and pepper to taste (lots of pepper for me, please!)
Add any other seasoning you like (Worchestershire Sauce; A1 Sauce, etc.)
Sidenote: IF you want to spice it up a little, add some 'peppercini' slices to the mixture, or, jalapeños! (Flame on!)
Blend again.
Make the patties larger than the buns and as thick as you like 'em. (Large and thick for me, please!)
Grill over medium heat until no farther than MEDIUM!!!!!!!!!!! (The added fat will help keep the venison moist, otherwise, venison will dry out QUICKLY, and you'll have shoe leather for dinner!)

A potato roll (or Kaiser Roll), mustard, lettuce, slices of tomato (NO ketchup/catsup!!!), a slice of onion (or grilled onions), some pickles on the side, and an ice-cold Coca-Cola or an ICE COLD beer!
Potato chips or thick-cut fries on the side. (Vinegar on the fries, please!!!)

Dang. It's lunchtime!! I just made myself hungry!!!!!!!
