So you went and opened Pandora's box! I just finished replacing the floor panels and cab mounts...you can still see the Midfifty P/N on the cab mount in this picture. You should be able to make this panel swap/repair without lifting the cab, just be sure to inspect the whole panel well before cutting out any one section. If you're lucky the rust out will be isolated to the cab mount area. I have more pics that I could send you if you would like to see how I replaced this panel.
I had to remove my cab mount via busting spot welds with a chisel, as I could only lift the cab about 2" with a fully assembled truck, I was afraid to try to raise it more with a bottle jack and length of flatbar as the floor is apparently weak. I assume when I do the drivers side I can just remove the plate around the base of the steering column and have enough play to raise that side w/o having to disconnect steering? (u-joints) When you re-attach fenders to inner fenders, is some sort of sealant neccessary in the "joint" of those two parts?
While you are at it be sure to look at the mounting wings coming off the frame. On my truck the drivers side wing was busted and I had to weld it back together. Turns out the passenger side mounting wing had also broke and welded by the PO. As far as the steering column, you should have no problem with clearence by just removing the floor plate, thats all I did. Let me add that this was a 'Fun" project as I didn't remove the front sheetmetal as you have and it was rather tight.

Jim while in Ocala at NPD, don't forget the lower mounts that have the cups attached for the big rubber bushing.#F-02058-1, you will most likely need them if you are replacing the floor pan. Also the retaining cups that the big bushing sits on #F02060-1 Get that bolt kit if you don't already have it #F5400-2AK Do you have the rubber bushings?(F5400-2) How do the swing arms look at the rear of the cab. Now would be a good time to replace them too. Your truck is starting to look like mine.

Hi Chris. I ordered the front cab mounts (complete kit with the steel cap welded to steel plate)and radiator support bushings from MF last week. They should be here tommorrow. Being that I could only raise the cab a few inches, I will prolly rivet the cab mount plate to the floor pan if I can't pre-weld b4 install.
