He's already tried that, he cleaned all the intank parts, and replaced/ cleaned all the lines. I heard his pump on the phone when we talked the other day and I am pretty sure the fuel pump is the culprit.

I have been having a similar problem with my '01 7.3, however my problems don't occur unless have been trveling 75+ for 20 - 30 minutes, or towing trailer at 60+ for awhile. Everything else sounds just like it: feels like lack of fuel, loses power, runs really rough, until shutoff or idles for 10 minutes or so. I had been reading this thread hoping for the ansswer, but looks like Bama is on a sabbatical.
In the meantime I checkec out a site called www.justanswer.com and got some more info from a guy there. He quoted a mechanic from some site (/uploads/Cwilson83/2009-05-02_081613_post.png).
In that case the truck would die after 5 minutes and recover after sitting for 5 minutes. He said the ICP fuel reg never drops below 55psi, pulled and cleaned the tank, cleaned filter housing, rail and injectors - SAME Problem. New fuel pump- SAME. new pressure valves in heads - SAME. Previous shops had replaced ECU, Pressure Regulator, and ICP Regulator.
Long story short, he found the sending unit in the Bypass System plugged up - "That's what them little plastic squares are on sending unit! Installed new sending unit and ---"
Now I've got to find the sending unit.......

Welcome to FTE.
You can dissassemble the mixing chamber and clean out those screens.
You don't need to buy a new pickup assembly.

Probably a stupid question, but can a "saturday-afternoon mechanic" do this? Is there a diagram I can get of where and what to remove? I know if I go to a dealer they are going to want to sell me as much as they can.
I know which end of a wrench to hold, but I need a picture. Can you help?

I don't have any pictures, but the mixing chamber is mounted on the end of the fuel pickup in the fuel tank.
