Not sure I completely understand you post.
Do you have an aftermarket gauge for engine coolant temp (ECT)?
If not, have you changed out the coolant temperature probe?
Are you losing coolant?
Do you see white residue under the hood (especially around the degass bottle)?
Do you hear your fan coming on when the temperature climbs (it is loud)?
Do you have any DTC's (trouble codes)?
When you say full of water, do you mean water or coolant?
