The early head design isn't up to par with the later E7 heads but you can find E7s all day long for $50 a pair. Are you wanting to stay carb or go fuel injection?

It would be much easier to go with what engine perches, exhaust, computer and engine harness it is already setup for....
Just be aware that the feds don't want you putting an older engine into a newer truck because of emissions. If your state does emission testing it could be an issue or if you sell it to someone without disclosure about the engine change. That being said a carb engine would be the easiest swap. The EFI uses electric fuel pump(s) so you'll have to modify that for the carb.

No need to modify the in tank pumps.
You'd just need an aftermarket FPR and some wiring to get the pumps operating correctly without the computer I'd think.
