Timing Gear replacement
Cant go wrong with the headers and duals, like I said I'd like to do that to mine but $$ doesnt permit at this time FWIW, my non cat truck came with an air pump, I eliminated it and used plugs in the exhaust manifolds. All it was doing was diluting the exhaust emmisions, It brings the parts pre million of bad exhaust down but you are still poluting at the same parts per mile
lol sounds about right to me for Detroit in the 80's. I did notice however after the truck sat for about a week without running when I started it the pump pulley squealed really bad till the truck warmed up but it hasnt done so since then so im not really worried about it. I checked the tension on all the belts, and removed my A/C pulley since it doesnt work at all and wont hold a charge
Ok I removed the cats from the truck, and came upon the rear air pump hose I think its called, that was welded to the tailpipe so I cut it on a flat angle so it can be re-welded back on, drove the truck and it still falls on its face. I know its prolly cuz that tube isnt connected to anything, and I still dont have that much brake pressure, but im sure a timing adjustment is in order again cuz now with it running off of straight headers and downpipes I can hear it idling a little off.
The lack of back pressure will mess with the timing just as much as having too much. 
If it's still doing the same thing with the cat removed, then I'd check the harmonic balancer, it's possible that it's slipped making the timing marks wrong.
Check your engine for TDC (Top Dead center) with the first cylinder, if the marks on the balancer is wrong, (The mark on the harmonic balancer should line up with TDC mark etc) make a new mark with a marker on the harmonic balancer, and try retiming it to the new mark.
If in doubt, have someone else check it,.

on a side note the cats were part of it so you didnt call it wrong really.. as soon as I cut the tailpipe giant pieces of the honeycomb fell out on its own, so both converters were trash
The lack of back pressure will throw off the proper timing curve.
But I am not saying this is his problem.
Lack of backpressure due to running strait pipes or no exaust will make the engine ping at factory settings.
It also can keep the EGR valve from working properly, which will also add to engine ping.
