I'm suprised CretePumper didn't correct you first.
And it continues to cure for about 21 years before it reaches maximum hardness. Course it reaches 90% of its full strength in about 10-15 days.

I wasn't going to get all technical about it, as some directly in the industry still don't know the difference between Concrete and Cement. Just for the record Cement is Powder and concrete is made with cement powder, I am still trying to figure out what exactly a "Cement Contractor " is.

Your right concrete goes through a Curing process, rather than Drying,, It depends on the design of the mix to achieve a designed strength @ 7, 28 and 56 days.

TYPE 10 cement powder (Portland) is a General purpose powder, with strengths achieved @ 28 - 56 days

TYPE 30 cement powder is a "High Early" powder, with strengths achieved @ 7 -28 days.

Again depending on the Powder used and it's application along with Admixtures to the mix design will determine the "Cure" process by way of Capillary porosity properties of the mix and powder used.

Not only does concrete "cure" by chemical reaction, if the concrete batch is large enough, it has to be cooled to keep it from deteriorating. Hoover dam for instance, has well over 500 miles of 1 inch pipe running thru the concrete that was used to cool the curing concrete with chilled water.

There is also concrete that will set underwater, and even ships have been made of concrete.

On a structure the size of Hoover Dam, the Heat of Hydration in the first 7 days of the Cure would have been high, most likely having an interior temperature near 55*C without the cooling in place, causing serious issues.

The Cement powder, would have been most likely been TYPE 30 or even TYPE 50 powder if there was high sulfate ground issues, TYPE 30 and TYPE 50 are a finer powder which react faster when high cement to water ratios are used and can have high Tricalcium Sulfate and Tricalcium Aluminate content, which add to high heat of hydration temps.

General rule of thumb is no more than 20*C temperature differential between exterior ambient temps and interior temps of the Concrete to prevent pressure cracking caused by thermal expansion or contraction from rapid heating and cooling.

Most of the mat pours I see, they will use sprinklers or use blankets to control the heat, generally outside pours such as mat pours or some structures will transfer heat through some of the structure itself or the ground, so not so much of an issue in comparison to the Hoover Dam, where the heat has no place to go.

As usual, FTE is a learning resource.....I've learned everything I always wanted to know about concrete.......Some of you make me feel like I've gotten trapped in a History Channel episode of 'Modern Marvels'.....
