Cats and Flowmaster

I ordered my Flowmaster Force II system for my 91 150 5.8l e4od 4x4. Ordered online from Summit on Tuesday and it was delivered by UPS (just standard shipping) this morning(Thursday)! This system is just HUGE :-staun compared to what is on the truck now. I'm going to install it this weekend. I've got a couple questions before I tear into it.

1. The truck has 123,000 miles on it and the tail pipe is sooty. Are my cats likely toast at this point?
2. If there is a cat problem is it usually just the rear or both?
3. Assuming that they are either no longer functioning, partially plugged or both...I am planning to "clean" them out. If I "clean" both the rear and the front out along with the 3" cat back am I going to harm my lower end torque? Or should I just "clean" the rear one and leave the front one intact??
Can any one give me some advice? BTW, no emissions issues in my state, functional or visual.
Thanks for any help, I'll post my thoughts after the project is done.
